Thyme honey from the white mountains of Crete
It is very common in Western Crete for beekeepers to place their hives in places where there are pines that release honeydew immediately after the thymus blossom - the last nectar of the summer. Then you harvest the thyme honey with a small proportion of pine (not the beekeepers mix, but the bee collects both and places it in the same comb). This combination delays the crystallization of the honey.
The proportion of thymus pollen in this harvest is 56% according to analyses.
